The quality of the meat depends on the animal's life, and our intuition was to raise them in freedom. The health of our pigs is guaranteed, as well as by our constant checks and the quality of the food administered, by the freedom they have to run, graze, eat everything that nature offers.
Accustomed to the temperature changes of the karst territory, the animals grow vigorously, and do not require medical or antibiotic treatment, if not the obligatory vaccinations. The processing of the meat is done within our farm in total respect of tradition; the curing process takes place in the cellars, which have an ideal climate and humidity as they are obtained by digging the karst rock located under our farm.
